Taste the Rainbow

That sounded like an awesome idea right up until the pediatrician clarified she didn’t mean eat more Skittles.  She meant buy, cook, and serve vegetables in every color of the rainbow.

Steak is a color right?

Here’s what I can cook:  beef, pasta, and potatoes.  I can also microwave green beans yay!

Full disclosure:  vegetables in our house are eaten in direct proportion to ice cream served because bribery is real.  Wheels are off.

However, because I like to win, and I can’t avoid our pediatrician for the next eight years, I found an easy way to eat the whole rainbow in one dish.  Ready?

Red, yellow, red, green, purple, and brown.  Boom.

Brown isn’t typically in a rainbow, but it’s in MY rainbow, and I get to say what colors are in it.

Which means bacon is also a color.

Here’s how to force your family to eat vegetables.

Slice vegetables, cover them with olive oil and salt, bake them for 10 minutes at 250, turn them over, bake them 5-10 more minutes, hide them in tortillas, tell people to eat them.

If you want a fancy sauce, put some canned jalapeno juice in ranch salad dressing.

That last bit may be why I don’t have a cooking show.

Actually it’s probably because I refuse to say “veggies.”  Everyone knows the only people who say that word are the smiley liars on TV who pretend cooking is easier than take-out.

What’s your favorite fast food restaurant?  Mine is Steak N Shake because you can order a hot dog and a cheeseburger at the same time and no one judges.

    Another way to sneak them is kale chips. Kids really dig them – toss kale in olive oil, bake at 400 for like 10-12 minutes and salt them. Trendy, yes, but good.

  3. Sorry, to tell you this, but vegetables are lovely stuff. I like quite some vegetarian (gasp!) recipes – and still I insist on not being a vegetarian! I love my meat as everybody does, but that does not rule out a love for vegetables. Take away always means you take away any kind of BS they put into that dish. I do take away my meals still. But I can cook decently, too. Pumpkin soup is not exactly nouvelle cuisine, and you can toss in some fried bacon cubes if you hate the idea of going totally without meat.
    I have a very nice cheese-sauce vegetable recipe with spinach, cauliflower and (tinned) tomatoes. I love to fill a bell pepper with a mixture of mushroom, nuts and oninons (all cooked in a pan before tossed in) – covered with some sheep cheese.
    I love a curried chicory – boil chicory, drain, add a bananaed-curry sauce – goes along well to a steak.
    I like to eat salad.
    Plus – I am lazy like hell … So if you want some fast and easy recipes – ask me.

  4. I get this nacho at my local Mexican restaurant. It’s nachos with shrimp, cheese, guac, sour cream, ground taco meat, and veggies like peppers and whatnot. Totally yummy! 🙂

  5. We always hid the veggies in stir fry. Now they’ve discovered our secret. They’re 13 and 15. Go figure.

  6. I do something similar, except I make vegetable enchiladas (mmm, cheese!) and my “sauce” is tinned tomatoes 😀
    My mum used to mash carrots and potatoes together to get us to eat the carrots – although I’m not sure why as carrots were the one vegetable all of us kids actually liked!

  8. I’ll put anything in a pesto/garlic wrap. Even vegetables. But not broccoli. And that’s the only thing George Bush and I agreed on. *grin*

  9. Oh, I likes me some Steak and Shake too! We have place here called Lion’s Choice, and that’s my favorite fast food place now. It’s like Arby’s, if Arby’s were the opposite of the shitty food serving place that it is. Lol. I would eat exactly zero of the food you posted picture of in this post, sorry. It’s not you, it’s the vegetables I’m sure. I do like some vegetables, but not the zucchinis and squashy ones. I like broccoli if it’s roasted and tossed in parmesan cheese and lemon juice. Good stuff! Lol. Let me know if you figure out how to make them eat it. Ace and Gman are pretty good about trying any food, but Cool will not touch a veggie. If he sees a spec of green in a boiled ravioli, he won’t eat the rest of it. He can’t be tricked and gives zero fucks, so neither do we at this point.     I have to trick my children and hubby into veg! I just open one of those plastic bags where you put meat in, throw in some bell pepper, carrots, tiny tomatoes, eggplant, olive oil, salt, garlic puree, seal the end, shake it and put it in the oven for 40 minutes. Then I take it out, turn it into puree and serve it with pasta!!! Everyone is fine and no one asks what it is!
    As for takeaway, because of my allergies I can’t do takeaway!

  12. My fast food world is shifting. I loved McDonald’s for a long time. Don’t judge me! But now with the advent of places like Chipotle and Five Guys, I’m finding you can pay just a little more for your fast food and get something of a MUCH better quality. It’s why McD’s is going out of business.

  13. We eat a lot of frozen vegetables. I cook them in the pan that I cooked the meat in. They take on that taste. Add 1/4 cup of water. Add the vegetables. You know they’re done when they’re not frozen anymore. If we had it our way, we’d eat nothing but meat and potatoes too. Yummmm…..
